I say i7

But don't get 12GB because it is overkill, you won't feel the difference between 6GB and 12GB RAM

i7, the 2 285's should be better than the 295, it seems that nvidia can't sandwich two 285 core's together for heat reasons

I say get none since your sig says you're getting a pretty good system from your brother for free!

If anything, get the i7, but there's no reason to be spending that much money! 8GB of RAM is definitely enough for a few years, especially if you're getting DDR3!

xD lol a friend on a game got new i7 rig but got 2 280s for SLI xD
and I'm swapping the Quad core rig for the i7 rig my brother is getting the i7 one instead :) so that's the computer my brother getting i'm not getting 2 computers xD
I'm giving my old computer to my grandma (Compaq 2007) Which is an ok computer :)
