what software is the best to copy your old files from your old drive to your new drive

i have a really old maxtor and the one i want to switch it to is a deskstar 123.5 gig ata/ide
 
Just install both drives (preferably on different channels) and copy and paste. Your best performance will probably be with a Linux or BSD live CD so you are only using the disks to read and write files, not run the OS.
