ok, been considering going core 2/nehalem, and couldn't really make up my mind so between which two of these systems would you recommend?
core i7 build:
processor: http://www.newegg.com/Product/Product.aspx?Item=N82E16819115202
mobo: http://www.newegg.com/Product/Product.aspx?Item=N82E16813128361
ram(most likely do 6gb's): http://www.newegg.com/Product/Product.aspx?Item=N82E16820145225
gpu(most likely do tri sli eventually): http://www.newegg.com/Product/Product.aspx?Item=N82E16814125200

core 2 build:
processor(wouldn't be full retail): http://www.newegg.com/Product/Product.aspx?Item=N82E16819115034
mobo: http://www.newegg.com/Product/Product.aspx?Item=N82E16813131319
ram(don't have link): 4gb's of cellshock ddr2
gpu(eventually quadfire): http://www.newegg.com/Product/Product.aspx?Item=N82E16814161242
the rest of the setup would all be the same(case, psu, hdd's, stuff like that) so which one, and why?

There is absolutely no purpose on wasting money on a Core 2 Extreme. Get something less expensive and spend the money on something else--like another 4870 X2.

I wouldn't go for the Nehalem processors yet since they are so new and may have issues that need to be worked out. The Core 2 Extreme processors are too high in price. Take a look at the following hardware:

Intel Core 2 Quad Q9550 Yorkfield (2.83 gigahertz) - $320
http://www.newegg.com/Product/Product.aspx?Item=N82E16819115041

GIGABYTE GA-EP45-UD3R motherboard - $120
http://www.newegg.com/Product/Product.aspx?Item=N82E16813128359

G.SKILL 4 gigabytes (2 x 2 gigabyte) 240-Pin DDR2 1066 (PC2 8500) RAM - $60

why would i need three x2's? its not like i would be leaving the qx at stock either, i'd be shooting for 4.2-4.5ghz clock, after 25% off from ebay, it would only be about 500 dollars

As emerald would say
BAM!
Case (180$)
http://www.newegg.com/Product/Product.aspx?Item=N82E16811129043&Tpk=antec twelve

Mobo+OS (255$)
http://www.newegg.com/Product/ComboDealDetails.aspx?ItemList=Combo.140341.13-128-363

Video Card+Ram (490$)
http://www.newegg.com/Product/ComboDealDetails.aspx?ItemList=Combo.141711

Power Supply+Processor (288$)
http://www.newegg.com/Product/ComboDealDetails.aspx?ItemList=Combo.141741

Hard Drive (100$)
http://www.newegg.com/Product/Product.aspx?Item=N82E16822152102

Optical Drive (23$)
http://www.newegg.com/Product/Product.aspx?Item=N82E16827151155

1336$

people are so obsessed with quad and sli/crossfire but theres really no difference in performance. 100 fps vs 110fps give me a break. 1 4870x2 is more than enough.

I'm not stating that you have to spend all that money--I'm just saying what you could do with it :). I also had not caught that you were getting two 4870X2s.

Back to the question.
With a good Core 2 motherboard overclocking to 500FSB, you aren't limited as much by your multiplier, but rather your cooling--so if you want to reach 4.5, you will want to seriously consider watercooling or at least a very high end air cooler.

case: http://www.newegg.com/Product/Product.aspx?Item=N82E16811163067

power supply: http://www.zipzoomfly.com/jsp/ProductDetail.jsp?ProductCode=382347&prodlist=celebros

hard drives 1&2: http://www.zipzoomfly.com/jsp/ProductDetail.jsp?ProductCode=10005298&prodlist=celebros

storage: http://www.zipzoomfly.com/jsp/ProductDetail.jsp?ProductCode=10005997&prodlist=celebros

incase you didn't notice, i'm not going for a budget build

edit: jet, i know that, i'm either planning for a pa120.3 on the cpu, or a 226 watt tec to cool the cpu, maybe even phase change if i have to go that far

whatever i can afford after i get a job, probably wouldn't be buying all at one time, case, cooling, and ram would be the first things to be bought, since they're always in demand, and the price is already pretty level

lol now i found out that tigerdirect is going to have a very good deal on friday, so it looks like its going to be nehalem/core i7 for me
