Which CPU is Best?

Which wins of these 2.

Is the top E8400/E8500 any good, compared to the quads (price definately gets me). Can it compete?

I do many things, mostly games, music, surfing the net but my current setup is a little slow on multi tasking (doing too many things at once).

So what is the best

Personally, I would go for the E8400 and save the cash for a really good HSF.
I would then proceed to overclock it to a far greater speed than any of the others that you mentioned =] The E8400 has enormous overclocking headroom and will run stable at 4ghz+
Many games and programs still can't take advantage of 4 cores.
 
My choice from your list of processors would be the Intel Core 2 Duo E8400 processor. The E8500 is over priced. Quad core processors are nice but like Langers2K7 said, most software simply cannot utilize a quad core processor currently.
 
Well i wanna get something that will be ok for at least 2 years.

Now can the Core 2 Compete with the 2.5 Quad?
Or will the quad be better, now and in the future?

I would look into keeping your current system and try to upgrading your RAM. You only have 1 gigabyte and that may be causing bottlenecks in your system. Upgrade it to 2 gigabytes and see if it runs any better.

E8400 is amazing compared to the 5600+. IDK about it overclocking because I haven't gotten around to it, but I heard it's good.
