This started happening after I postponed "new version" of windows update.

Now it just says I am out of date.

also sometimes when i click on the start button, everything on the start windows is grayed out.

please help

In the search bar type winver and hit enter. This should tell you which version/build you are on.

If its a real old version, they had issues updating.

Can you check recently installed updates. When did it last successfully install updates?

Try the update now button at the top?

Decent chance you'll need to reinstall Windows if nothing above mentioned. Might be able to create installation media from the link above and then run the setup. This will force install the latest major update and I think should at least let you keep your documents and settings if not absolutely everything. Is there anything on the machine you need, or have it backed up?
