Why does the quick access section show a documents folder with all my documents but they are not in the This PC documents folder?

Quick access just shows all the recently opened files and folders and pinned folders. Windows tends to be redundant in a lot of things. The files in the quick access may not actually be saved in your documents folder.

OK. I thought recently opened items were in the list below the main body of quick access.

The Documents folder can also be moved to your desired location by going to Properties, Location Tab, Move (or Find, Reset).
Recent Items can be found here and you can shortcut recent documents to your desktop.

You may create a shortcut of Recent Items to access it faster.
