I have just created a virtual machine on my computer and installed windows 7 on it, when I installed it I used the recommended settings.
Can anyone tell me why the minimum RAM was 1GB when on and physicall machine its 2GB?

False.

You can't assign all of your physical machine's RAM to the VM. Even if you could it'd be a horrendous idea. If you only have 2 GB in your host OS then that already presents a huge performance problem when trying to run a VM.
 
As long as your system has ample RAM, you can go back to the VM and assign it more RAM if needed.
