Windows start menu recent documents question

Hey, I have been monitoring my teenagers IMs recently and have ran into some trouble. I log his chats to make sure he is staying out of trouble and when I view them they appear on his recent documents tab on the start menu.
I know that I can right click and delete them from the list or clear the list but how do I get the list to replenish? I have tried opening random pictures or music files and they are not all going into recent documents tab?
Any help is most appreciated.
 
i know some programs dont put file in there when you view them. im not sure how it works but you could try some other text viewers. maybe jeit.

For future reference, right click task bar, select properties/Start Menu Tab/Customize/clear to clear recently viewed documents. How you bring them back, no clue. It might be impossible.

Right click taskbar -> properties -> customize -> un-check show recent documents
