There are apparently DVI versions as well, but I think they are "unofficial" so probably less common.

To use DVI on the Xbox 360 you would need the Elite, which has HDMI output.. you could then purchase an HDMI to DVI cable for your set should it have a DVI-D input, but not HDMI.
If you have a monitor that has DVI-A input, you could use a VGA to DVI-A adapter with the Core and Premium consoles.
If you have a monitor that has DVI-A input, you could use a VGA to DVI-A adapter with the Core and Premium consoles.

All you need is the Xbox 360 VGA HD Cable (which I own). I used it on my 17" LCD for a few months and the difference between it and my old SDTV was phenomenal. A few weeks ago I picked up a 26" HDTV and I'm in love with it now, lol.
