low end and mid end cards don't really improve much at SLI mode or crossfire mode. would run faster but does not surpass a high end card at all.
SLI and crossfire mode doesn't endable 2 cards running at 200 percent. it only adds about 25 - 75 percent. even quad core doesn't run at 400 % nor does duo core.

2900xt! it'll outperform a gts, and it's a true dx10 card!
the 8600gts's in sli will significantly outperform even a 8800GTX

DX10 had a set of standards that video card manufacturers had to meet, however nVidia never included all those features in their 8 series cards, so Microsoft agreed to make those features optional. The 2K series however has those features included.But HD2900XT is more expensive

Look at games, sometimes the 8800gts beats the 2900 and sometimes the 2900 beats the 8800gts.
