Building a new gaming computer, looking for some advice for different price ranges

Alrighty, I am looking to build a gaming/photoshopping/video editing machine. I plan on multi-booting Linux, XP and Vista (64 bit), though I may phase out XP eventually. I am looking to figure out part lists for ~$1500, and ~$2000 price ranges. What I would like to nail down is what each of those systems will be capable of in practical terms. No need to list mice, keyboards, or monitors, as I already have those components. However, if you have suggestions for some really nice ones for gaming, or know of really good deals (especially the monitor), feel free to list them, as I have a use for my old peripherals if I upgrade any of them. Regardless, do not include the those components in the price of the machine. Some other things of note:

Almost obviously, dual core is required.
No less than 2GB of fast ram. Preferably 3 or 4 considering the way in which Vista manages memory.
Water-cooling is something that I would -like- to do, and I think that when you start to go dual-core and overclock, water-cooling can be quite nice for performance and extending the life of the machine.
The option for SLI/Crossfire (If it fits the budget, include both cards, but even if it doesn’t, I would like the option).

Feel free to ignore the ~$1000 price range, it is the least likely range for me to be buying in. I guess I am just looking to see what I can build for those prices, and then I will look at what laptops for the same price can do, though, I am leaning towards the desktop. Anyway, I feel like I am forgetting a lot of information that I wanted to post, I will add things as I remember. Feel free to ask, and I appreciate the help.

Edit: I would like to build this machine mid march/early april.

I would suggest the commando mobo by asus, It is an SLI board with excellent OC features. an e6600, 8800gtx and 2 gigs of corsair xms dominator memory. I would get a quality PSU if you will be spending this kind of money, Seasonic and Antec's are good choices, if you are unsure about models stay above 100.00 and you should find a good one from those companies. As far as water cooling you can buy the Antec P180 Performance case with water cooling installed in it already for 400.00, it is an awesome and quite case that would not disappoint you. Hope I helped. All this should be possible for 2000.00

If you want a bit more future upgradablility, consider a 680I motherboard. Like the Evga one for slightly more than the commando mentioned above.

How about the CPU, RAM and Graphics card(s)? What is the best bang for your buck these days, and will new products be out or prices be lowered within the next month? I'm just trying to nail down the best time to start ordering parts, and I am still not sure which CPU I should get, and if I should get 2 slightly older, "more bang for your buck" cards for the SLI, or maybe get one card that is top of the line, with the option of adding it later.
