CPU does matter, yes, but your FX-8120 should be fine for gaming, Overclock a little and it will be nicer still.
The graphics card is what you want to spend most on when building a gaming PC, so I'd say that yeah, if you want to improve gaming performance, your best bet would be a new GPU and PSU. A 7850/7870 and a Corsair CX 600 would be great and would work with your AMD setup just fine.
I think my PSU is 750W, but that one is 600W, why would it help? (sorry again!), and would the GTX 500/600 series be compatible with my motherboard?
