Actually there's quite a bit. Just very little is games. Most anything you want to do on windows (aside from game) can be done on linux.
 
maybe so.. but how much software is linux compartible? (this is a question.. i havnt had to do much with linux yet)

In my experience anything that you can get for windows, there is an open source project which is better. Here are a few examples

VLC
Foobar
Myth TV
DRBL
DD
Live distro cds
backtrack
auditor
knoppix
winamp (yes win amp is open source)
tons of text editors (important for developers, and IT workers)
Open Office, Star Office, etc
Konquerer, Firefox, camino, etc


Then of course there is wine, which is a set of APIs that allows you to install windows based software. I run IE6 SP2 on my Linux box because I need heavy active x support for a few websites I work with at my job. I have also successfully installed HL2 under wine, but never really played it that much. No idea how buggy it was. However, the point is, technology will only get better, and everything that gets huge in the open source community, generally gets ported over to windows. Some things are just plain out better, but have a higher learning curve not because its hard, but because it is so drastically different than windows platform.
