Meh, I did watercooling before and while it was fun, it wasn't worth the $300+ I paid.
 
I've found that ASRock are better value for money boards than Gigabyte or Asus. They've really upped their game in the last few years.

I'd change the SSD to a Crucial M4 or Corsair Force 3 drive. OCZ are in limbo at the moment.

The PSU is rated for 850W and only has a bronze rating, most PSU's at that level have at least silver. You won't need 850W for that system either. A 700W will be more than enough and allow for upgrades/expansion. I'd take a seasonic or silverstone over any thermaltake.

Cases are a matter of preference, I don't mind the orange and black :) Corsair C70 is a nice case though.

As for the screen... the resolution is nice, but the anti-glare coating will make it annoying for photo work with lots of white or bright colours. It won't be consistent. I say this as it's a Dell U2711 panel, which we have at work for our designer machines. The anti-glare ruins an otherwise awesome panel :( Find a screen without anti-glare if you can.

I was going to disagree, but that is one of the better boards they make. The Extreme series are not worth they money they charge though. Only good thing is the gold caps, and Z77 chip. Above that, it is just a low end board that is painted pretty. (I say low end because they use dpak mosfets and splitters to maintain its "8 phase" power.
