On the first section note the lower box with other items listed directly under it. That's called the selective startup. Once you check that off the other items will be seen as normal rather then being darkened out. The only thing there to check or uncheck at this time is the selective startup option and then proceed to the startup group.
Later you can hide the MS services to look over the items in the services group. If you disable the wrong thing in the startup group you can go back and enable it at any time. But you will want to hide the MS stuff when in the other section. As far as the first tab that appears first. There will be three places offset at the top over all of the check boxes. Generally only advanced users will uncheck the lower items like boot.ini settings and the like there.
